Hey Friends! Another new recipe for you! I had potatoes from my grandparents this week, but I wanted to find a way to make them a little healthier. So I found a veggie-stuffed twice baked potato recipe! I don't know about you guys, but any time I make twice baked potatoes, I end up with more stuffing than will fit back inside my potatoes. That was definitely the case again today. But I don't like letting anything go to waste, so I slices some green bell peppers and "stuffed" them with the remaining mixture. Also, twice baked potatoes are supposed to have cheese in them, even if they are the healthier, veggie version. The recipe didn't call for cheese, so I added it in. And let me tell you, it was a good choice! ;) I hope you enjoy this healthier spin on a classic favorite, Twice Baked Veggie Stuffed Potatoes!
To go with our potatoes tonight Michael and Connor grilled some chicken for us. We got this Honey Garlic Rub at Sam's and it is THE BEST! We love it on chicken and pork! It is just sensational! Yum! So if you have a Sam's membership, you should go check that out too!
