Breakfast Egg Wraps

I love having meals pre-made and ready to Michael to grab in the morning when he leaves for work.  I don't usually get up until 7am each morning and the thought of losing precious sleep to get up and make my wonderful hubby breakfast is less than appealing.  :P  Poor Michael!  So when I can make a batch of something, or a casserole that I can divide into individual servings and load the fridge with easy to grab tupperware, I do it.  Today I made a batch of Breakfast Egg Wraps.  I found a recipe on Pinterest (Who's surprised?!?!) that Michael and I both thought looked good, so I whipped it up!  I love making wraps in bulk too, because, again, they're easy to grab and I don't have to cook something new (and dirty a ton more dishes) each day (because I've done it before and it's a lot of work).  Neither Michael, nor I have actually tried these wraps yet.  I made them this morning after Michael left and after I'd already eaten breakfast.  But as soon as we try them I'll get back on here and let you know how they turned out.  :)  My only concern is whether they'll reheat ok with the spinach in the wraps.  I guess we'll find out soon enough!  ;)

Breakfast Egg Wraps
1 whole wheat wrap
1 slice of cheese (use your family's favorite, we use swiss)
1 egg
A splash of milk
Salt and pepper
A handful of spinach

Lay out wrap, cut slice of cheese in half and lay across wrap.  Scramble egg with milk, salt, and pepper.  Cook egg mixture until firm, flip and brown on the other side.  Transfer egg to wrap.  Add spinach on top of egg.  Roll wrap.  Enjoy!

It would be super easy to add other ingredients to this wrap!  Add whatever you have on hand or whatever your family likes to go with their eggs or breakfasts.  It's kind of like a deconstructed omelette!  Very customizable!  My favorite!
