Michael's Graduation!

Hey everyone! I am finally graduating from College!

Formal invitations will be sent out but so all of you know, my graduation ceremony is on May 14 at 6:15 pm at Bramlage here in Manhattan.

It's been a great time in college, but I am ready to move on. We plan on moving to Wichita in June once our lease is up. For those of you that don't know, I did not get the Emporia job so I am going to test the waters down in Wichita.

Til next time,

Thanks for reading!

Recipes Again!

Sorry I haven't been writing about cooking lately.  Frankly, I haven't been cooking because my kitchen has been a disaster and I haven't gotten around to cleaning it.  But this week my wonderful hubby has been helping me clean the whole apartment, including the kitchen.  So now that things are back in order, I've been cooking again!  Here's what I've been up to!

Kippy Burgers
This recipe came from a guy at the fire station.  You mix a pound of ground beef with barbeque sauce, mustard, Worcestershire sauce, brown sugar, garlic powder, onion powder, salt, and pepper.  Sorry I don't have measurements, I just throw a little of this and a little of that it.  Maybe I'll try to measure it next time.  Once you've mixed your ingredients, for the meat into patties and grill.  They have a great flavor!

Marinated Grilled Chicken
This isn't so much a recipe as a marinade recommendation.  I marinated a pound of boneless skinless chicken breasts in the Dillons brand 30 minute marinade (Caribbean Jerk flavored).  I thought I was going to make these on Wednesday night, but didn't end up making them until Thursday evening.  They ended up marinating for over 30 hours, and still tasted great after I grilled them.  Since we don't have a grill anymore I grilled these and the burgers on the George Foreman.

Homemade Chicken Noodle Soup
Michael was sick this week, so I made him some chicken noodle soup.  I used the frozen turkey broth I had from Thanksgiving, made egg noodles (Grandma Counterman's recipe using eggs and flour), and added some frozen veggies.  There wasn't much to it, but I think it helped Michael to feel better.

I know none of these were actual recipes, but I was actually cooking this week and it was nice to be back in the kitchen.  It will be nice to have a bigger kitchen someday to do my cooking in.  Just a couple more months!

Cats Win!!!

As many of you know already, K-State won last night!  Wooohoo!!  I wasn't excited about how late the game was, but I got in a quick power-nap before we left to go watch the game, and I'm actually not too tired today.  Must have slept well last night.

Michael and I have an ongoing bet every year when it comes to our brackets.  We score the brackets 2 ways, one with overall correct picks, and one with weighted picks (play in games are worth 0.5 points, first round is worth 1 point, 2nd round is worth 2 points, sweet sixteen is worth 3 points, elite 8 is worth 4 points, final 4 is worth 5 points, chamionship game is worth 6 points, and the national champion is worth 7 points).  The winner of one bracket picks where we go for dinner, the winner of the other bracket picks what movie we go see.  So we get a fun date at the end of March.  :)  I'm winning so far!  :)

We're going to Wichita for a few days here at the beginning of Spring Break.  I figure we'll be out and about doing things, so we plan to rest and relax at the end of break back in Manhattan.  Should be a nice Spring Break.  We thought about going to Colorado for break, but can't afford it.  Stupid gas prices.

Hope you get Spring Break and that it goes well!  If you don't get one, enjoy work next week!  Tehehe!  :)

Big 12 Tournament and KC Weekend

Sorry I've been slacking off lately!  Here's what's been going on:

Michael and I went to the Big 12 Tournament in KC last weekend.  I got tickets for an arm and a leg and we managed to be sitting 2 rows from the top.  :)  However, there are no bad seats in the Sprint Center.  We got to watch 2 different games with our tickets, it just worked out right that we got to watch KU and K-State.  The KU game was nerve wracking (we were cheering them to lose, sorry KU fans, we didn't want to have to play them again!), but they ended up pulling it out.  After the game I noticed a lot of KU fans leaving, not wanting to watch the K-State game.  So we went downstairs, and as people were leaving, asked for their ticket stubs.  A couple graciously gave us theirs, telling us they weren't too great, as they were in the corner.  However, when we got to the seats we were very happy!!  We ended up in the corner, on the 12th row!  We were behind the Colorado bench.  It was much better to watch the K-State game from so close!  We weren't impressed with the atmophere of the Sprint Center.  We much prefer a fired up home crowd to a neutral setting.  However, despite our best cheering, the Cats couldn't pull it out.  Colorado seems to have our number.  Luckily that was the last game we'll have to play against them.

The rest of the weekend we stayed in KC enjoying some time off.  We went to the Melting Pot (a fondue resteraunt) for dinner on Thursday.  We did shopping on the plaza and around Nebraska Furniture Mart on Friday.  Instead of going out to dinner on Friday we grabbed some fast food (a place called Culvers, I think???) and went back to our hotel to relax and watch some basketball.  Even though we were on a mini-vacation, I still couldn't stay awake much later than 8:30.  I'm getting to be such an old lady!!  On Saturday we did a little more shopping in the Legends area, before heading out of town.  We stopped in Lawrence for lunch with Nick and Maggie and did a little shopping on Mass Street.  Then, when we were done there, we went back to Topeka to see our puppy and my wonderful in-laws who agreed to puppysit while we were out of town.  Harlee had been good while we were gone.  We spent Saturday evening there in Topeka, then went back to Manhattan on Sunday.  It was a very nice and relaxing weekend!!

Coming back to work wasn't too easy.  And I learned that some of my kids were not on their best behavior while I was gone.  That made yesterday a rough day.  Today has been much better.  Only 3 more work days until Spring Break!  (Which will probably just be here in Manhattan since we've been traveling all over the place lately.)

Hope all is well with you!

Almost Done with Conferences!!

I have a half day more of conferences to go!  The kids' last day of school this week was yesterday.  I have conferences this morning from 8 until noon, then I'm free until Monday!!  I only have about 5 parents I still need to confer with, so it shouldn't be too bad of a day.

This weekend we're going to Wichita to visit Sis and Adam, celebrate Mama's birthday, and go to Amy's baby shower.  I think we also might be hanging out with Cathy on Saturday night if the idea sounded okay to Mama and Sis and Adam as well.  Should be a packed weekend, but I'm glad to be going home again.

Michael had his second job interview with Vech Tech yesterday.  He said it went well and he felt confident about it.  The way we figured it, they were probably interviewing between 6 and 10 people for the 2 positions that they have available.  I don't know if they were going to other schools to interview for these positions as well.  Now we just sit and wait to hear back from them.  One thing I thought was interesting and also a little sad was when Michael asked the interviewers what there was to do in Emporia because he hadn't been there before, they nervously laughed and explained that Emporia is a great place for people who like to make their own entertainment...  Great...

Also, I think I have perfected my oatmeal recipe!  I've been eating oatmeal for breakfast the last few weeks because it really keeps me full until lunch.  I think I've perfected my recipe.  Here's what I do:  Combine 1/2 cup oats, 1/2 cup water, and 1/2 cup skim milk in a bowl.  Microwave for 1 minute.  Remove from microwave, add a healthy dash of cinnamon, 1 packet of sweet and low, and a hearty squirt of no-sugar maple syrup.  Stir everything together, then microwave another 45 seconds.  Enjoy!  I might start adding fruit if I get some from the store, but this is a great base recipe!  Yum!  Enjoy!

That's about all I have...  I'll try to get Michael to post about K-State's recent climb and how we pulled our heads out of the gutter after Freddy and Wally left.  He'll be much more insightful than I will.  :)  Have a great day!  Love ya!!
