This Week

this week has been a busy one for me.  we have parent teacher conferences next week, so ive been working frantically to get all my grades done and ready.  yesterday was a teacher plan day, but because the program that we input grades into was running so slow, i didnt get done.  so i have work to do over the weekend.  boooo...

i did get quite a few things accomplished this week.  i got our hotel room booked for nick and maggies wedding in june.  since we are going to be in kc for a couple days anyway, michael and i decided to stay a few days after the wedding and have a little mini vacation to celebrate the end of the school year for both of us.  so we will be in kc from thursday, june second until monday, june sixth.  we got a great deal on a hotel downtown in the power and light district.  the hotel usually books for about one fifty five per night, but we are getting it for sixty per night.  i officially love the priceline.com name your own price tool.  i also got a gift for maggie for when she has a bridal shower.  im very excited about it as well.  i started planning our kc trip this week, here are some of the things we would like to do...  boulevard brewing company tour, dueling piano bar, legends shopping center, the melting pot for cheese and chocolate fondue, and the plaza.  we should stay plenty busy.

so next week is parent teacher conferences.  i will have to stay at school from four to eight on monday and tuesday nights giving conferences.  wednesday is the last day of school for the kids, then i will have more conferences on thursday morning from eight to noon.  then i will have the rest of the day thursday off and all day friday.  we are going to wichita for the weekend to celebrate mamas birthday that was on wednesday and also to go to amys baby shower.

i also found out yesterday that my school district made a decision on how to make up the missed time for the snow days we had.  we are going to add fifteen minutes to each school day, beginning school at eight fifteen and ending at three fourty, we are also not getting good friday off, and the last day of school that was previously a half day is now a whole day.  while im not thrilled abouy having to go to school more each day, im glad our last day of school is still may twentieth.  that will give michael and i ten days to get everything packed and moved to a new home before we have to head to kc for the wedding.  should be a busy few weeks.

sorry i havent put any new recipes on in a while...  we havent had a ton of money to buy groceries.  i have made at least two new things in the last week, i will take some time later today and tell you about them.

Taxes!

I know a lot of people dread tax season and doing their taxes.  I don't dread doing my taxes, as I don't do them.  I took a class in high school where I learned how to fill out my tax forms and things, but there are so many other items that we have that go into our taxes, that I don't bother to even try to do them myself.  So yesterday Michael and I went to H&R Block to get our taxes done.  We have several additional forms that need to be filled out to get our full refund, but the lady that was working with us yesterday was great and very patient with us.  I'm excited to report that we will be getting $3500 back!!  I'm so excited!  That's about $1000 more than we got back last year!  It couldn't have come at a better time.  I'm most excited to finally get my gall bladder paid off!  We'll be able to pay off the rest of the amount instead of spreading it out over the next 4 months.  It will be nice to have one less bill every month.  Anyways, that's my exciting news!  Hope your tax time is as fruitful!  :)

Valentine's Day and Other Bloging I Need To Catch Up On

there is so much i havent blogged about.  sorry for my tardiness.  here are some of the things that have happened since my last blog...  michael and i exchanged our valentines gifts, we wnt out to eat for valentines day together, we got new phones, michael got a new phone number, we beat ku and rushed the court, i had the longest week of school yet, the weather turned beautiful, we went to the dogpark, michael got called back for another interview, amy colby came to visit us here in manhattan, and we had a progressive dinner for our date last night.  i know thats a lot of information, so i will try to limit myself to one or two sentences about each thing.  try...

on the friday before valentines day michael had a dozen multicolored roses sent to me at work, the are gorgeous.  when i got home we exchanged gifts.  i got him season one of arrested development, season two of big bang theory, and the bruno mars cd, along with some junk food.he had another gift for me to go along with the flowers and necklace chain he had given me that morning.  it was the new bruno mars cd...  we gave each other the same thing...  but we both love the cd, so each of us have one of our cars now.

we went to longhorns for valentines day.  it was sooo yummy.  we both had steak, we decided to splurge for the special day.

i think i wrote about this already, but michael and i made the switch and went ahead and got the smart phones we have been wanting.  its a big cost up front, but not much more on our plan, so we decided to go for it.  michael got a new number because it was going to be cheaper that way based on the deals and incentives they had for that weekend.  he wasnt extremely excited about that, but he loves his new phone.  his new number is seven eight five, three four one, seventeen ninetyfive.  sorry, i cant type digits into this text box from my phone for some reason...

ku game was awesome.  i think ku thought they were just going to walk in and win without a problem.  our team was ready to play and our srowd was pumped.  after we won we rushed the court.  i was glad to get to do that before we leave manhattan.  amazing night.

my school we last we stank.  my kids were bad for a sub, a had three different subs throughout the week...  there were just a lot of things that went wrong or were frustrating...  i was happy to see the weekend come.

wasnt the weather wonderful the end of this week?  it felt like spring, it smelled like spring.  it put me in a great mood.  i hope spring is right around the corner.  im tired of winter.

since the weather was nice, we took harlee to the dogpark.  shes too old now to go to puppy playtime, so the dogpark is where we go for her to be offleash with other dogs and play.  however, shes somewhat antisocial, prefering to be on her own sniffing things.  oh well, at least she gets a chance to be outside without a leash.

michael got called back from the company in emporia to set up another interview.  he made it through the phone interview.  now he will interview with the company on campus in a week or two, then, if he makes it through that interview they will ask him to go to emporia for his last interview.  please be in prayer for him as he contines his job search.

amy is a wonderful friend of mine from high school.  she was visiting another friend in town and came to visit with us while she was here.  we hung out and talked late into the night friday, then hung out and watched tv on saturday.  we had lunch together at mcalisters, then she headed back to kc.  we made plans to see each other again in june when we will be in kc for nick and maggies wedding.

we were trying to figure out something fun to do for a date last night.  we finally settled on a progressive dinner where you get different parts of the dinner at different places.  we started at olive garden for appetizers.  we had smoked mozerella fonduta.  yum.  then we went to applebees for drinks.  i had a long island, michael had a margarita.  yum again.  for dinner we went to carlos o kelleys.  we were actually pretty full after the first two places, so we didnt eat much and brought plenty of leftovers home.  we skipped desert since we were so stuffed already.  orange leaf will have to wait for another day.  it was a really fun night.  we decided we want to have some variation of progressive dinner date night once a month....  we already have ideas for next time.

Week 6: Mexican Soup, Chicken and Pasta, and Banana Chocolate Chip Cookies

Mexican Soup
I got a calendar in my mailbox at the beginning of the year that talks about healthy living.  It has recipes on it, as well as a way to track your workouts and weight (goals, successes, etc.)  This recipe was in that calendar as the January recipe.  This recipe has corn, beans, broth, tomatoes, and chicken (other stuff was in it, but this was the basics).  It turned out a little more like stew that soup (bigger chunks of veggies/chicken, less broth).  I enjoyed this recipe, but I like soup a little more.  The flavor, however, was really good.

We give this recipe 3.5 stars.  Like I said, I prefer soup to stew.  :) 

Chicken and Pasta
I don't have my cookbook next to me at the moment, so I don't remember the exact name of this recipe, but it was from my Comfort Food Diet cookbook, so this was a healthy recipe.  Sadly, it wasn't as good as I was hoping it would be.  I breaded chicken tenders and cooked them in a small amount of oil (sort of frying).  I also made a homemade tomato sauce (also a part of the recipe) to go with the chicken.  That was all that was included in the recipe, so I chose to pair this with some pasta, always a favorite of Michael and I.  The sauce turned out quite well and was really yummy with the pasta.  The chicken, however, had a funny taste (maybe it was something in the breading, or the fact that I didn't fry it in much oil).

Michael and I give this recipe 2 stars out of 4.  The sauces and pasta was good, but since the chicken was one of the main parts of the recipe and it didn't turn out too well, it left this recipe wanting something more.  Not my favorite, but I might make the sauce again sometime.  :)

Banana-Chocolate Chip Cookies
This was another recipe from my Comfort Food Diet cookbook.  I chose this recipe because it called for ripe bananas and a have a freezer full!  Michael and I like bananas, but there's usually one or two left in every bunch that ends up ripening too much before it gets eaten, so I freeze them.  This recipe made about 3 dozen cookies, each about 75 calories.  They are soooo yummy!!  I think the bananas kept them very moist.  They are spongy and scrumptious!  You can't help but eat several.  The banana flavor is subtle, but delicious!

Michael and I give this recipe 4 enthusiastic stars!!  Great recipe!  Ask for it!  You should try it!!

Can't sleep.... might as well blog!

well, i woke up at six thirty this morning, thinking about a dream i had, then havent been able to go to sleep since then.  so i thought id update the blog with some recent news from our lives...

first of all, the reason i have no capital letters and very little punctuation on this blog is because of my new phone.  im really excited about it, but a little irritated that it doesnt work properly with the blog.  anyways, michael and i got new smart phones.  weve wanted them for a while, and we went by sprint yesterday and decided to get them.  it will add a little more to our plan to get the data package, but i think we will like them.  havent decided yet if we would have liked the iphones better, still getting used to the new android interface.

in other news, we may not be going on a big fancy vacation this summer after all.  turns out the practical side of us came out and now were thinking a new washer and dryer would be a better use for all that money.  im sure those of you who graciously allow us to use your washer and dryer would think its a good investment as well.  so now were looking into a high efficiency washer and dryer.  well see how much of our saved vacation money is left for a washer and dryer afterthe cost of moving, a wedding, car insurance, a deposit on a new apartment, and getting the puppy fixed....  i cant wait to be financially stable.

another exciting development is that michael has a phone interview this week with a company he spoke with at the career fair last week.  while im not too excited about the prospective location. i am excited about the idea of him having a job doing design like he would like to do.  and wherever he goes, i will go too.  we will see what happens.  please keep us in your prayers.  thanks.

Valentines Day Present! (Early) :)

I am soooo spoiled by my wonderful hubby!!  Last night I had a parent meeting at school, so I didn't get home until about 7:30.  For those of you who don't already know, since I got out of college and started working I have become an old fuddy-duddy who goes to sleep somewhere between 8 and 9 at night.  So I knew I wouldn't have much time to spend with Michael before I would be tired and ready for bed.  It was nice seeing him after the long day and Harlee was VERY excited (as she usually is when anyone comes to our house).  But, as I predicted, it wasn't long before I was tired and ready to go to bed.  I asked Michael if he wanted to come and put me to sleep (he lays down with me until I fall asleep, then gets back up to do work, homework, or watch tv), I expected him to laugh at me for being tired so early, but he said, ok!  I should have known then that something was up, but it wasn't until I walked into our bedroom that I saw what Michael had done.  He cleaned up our whole bedroom!  Put away all the laundry, put away the Christmas presents that hadn't got a place yet, cleaned the nightstands of their clutter, even vacuumed!  There were candles lit, the lava lamp was on (not sure how long it's been since I've seen it up and working), the bed was made, and some quiet music was on.  It was the perfect thing to come home to!!  I was so happy!!  Michael and I layed in bed and cuddled and told each other how much we love each other.  Then he mentioned he picked up my Valentines Day present today (yesterday).  I asked if I could have it, but he said it had to be the perfect moment.  Eventually I fell asleep in his arms, knowing I'm the luckiest girl in the whole world to have such an amazing husband.

This morning after I got up and ready for work I jumped back into bed and asked Michael if it was the perfect moment yet.  He was sleepy and groggy, but he managed to laugh at me and tell me no.  I asked why not and he reminded me that the night before I had said that I would wait until the perfect moment and then some.  I told him that the perfect moment had been the night before and that I had waited all night until this morning.  He laughed at me some more.  I asked if he was hiding it in his nightstand.  He told me no, but smiled at me as I went to check it out anyway,  When I opened the drawer there was a little black Zales bag inside.  I gasped and asked Michael if I could have it.  He smiled at me and said ok.  I opened the bag and the box inside to find a beautiful white gold chain.  :)  It's to go on my necklace that he bought me 2 Christmas' ago.  My chain had a couple of broken links (it was still all together, but weakened, and if another link broke in the same spot the whole necklace would fall off).  This new chain is heavier and stronger, but still beautiful!  Michael threaded the heart onto the new chain for me and I'm wearing it with confidence instead of worry now.  :)  What can I say?  He's the best!!

Week 5: Crockpot Beef Stroganoff

Sorry this is so late! I'll try to get these posted by Saturday, even if we are out of town from now on. :). The idea of a crockpot recipe is that you throw everything into th crockpot in the morning, then go to work, and when you get home dinner is ready. Well, if you were reading my blog last week, you probably noticed that I only went to work 2 days last week due to Snowmagedon 2011. So instead of taking care of things before I went to work, I threw everything together late one afternoon and we had a wonderful dinner. Normally Michael and I make beef stroganoff from a box using hamburger helper. So I wasn't sure how it would work out actually cooking it myself. It turned out great! I used stew meat instead of hamburger. I probably could have cut them into a little smaller pieces, but overall it turned out quite well. I used a whole onion, which turned out to be a lot, but Michael and I like onion. For anyone else making the recipe I would suggest reducing to 1/2 of an onion. Overall, great meal!

Michael and I give this recipe 4 stars! I highly suggest you try it! :)

Snow Day 6.0

Well... It happened again. Mother Nature reared her ugly head and we're covered in another 4-6 inches of snow. It hit Junction City even worse, so as a result, I have no school again today. We now have 3 days of school we will have to make up somehow this year. I'm hoping hey don't add days to the end of the school year (We're supposed to get out on the 20th and Michael's and my anniversary is on the following Monday, the 23rd. I really don't want to have to work that day.), but who knows what will happen at this point. I woke up this morning hearing Michael's phone go off at 6:30am. I quickly got out of bed, assuming that he had a snow day, and that was the reason they were texting so early in the morning. But I was wrong. The text was from K-State, but it was just telling him that he DOES have school today. I was disappointed that he wouldn't be spending any of my snow day with me. He has class from 10-5:30 with only short hour-long breaks between them. Not enough time to come home and see me or anything. So I'll be here at home with Harlee today on my own. Guess I won't be distracted and will get plenty of work done... Booo!!!

In other news, Michael told me what he got me for my birthday!! Apparently the traveling cast of Avenue Q (a broadway musical) will be coming to K-State a few days before my birthday in April! Michael got me tickets to see he show!!!! Sis and I have been talking for some time now about a trip to New York to see this show. We're still going to make that trip someday! But that gives you a little bit of an idea of how much I was to see this show! It's going to be awesome! I'm totally jazzed!! My hubby rocks!!!

Snow Snow, Go Away, And Don't Come Back Until Next Year!!!

I am so tired of the snow!  We've already canceled 5 days of school since we got back from Christmas break, and while I love snow days, I am very concerned about State testing and how things are going to go if we keep missing school.  We're here at school today.  We've got about 5.5 inches (in Junction) since it started snowing last night.  It will continue to snow here throughout the day.  So there is a chance we might not have school tomorrow.  I'm here at school today, but that doesn't mean my kids have to be.  If they are absent today it counts as an excused absence.  I have 10 of my 25 students absent today.  So much for getting much done.  Ugh!  Spring, come quickly!!

Jen's Super Bowl Play-by-Play

Here's what I'm thinking throughout the Super Bowl...  Maybe of these things are my facebook statuses...  Or statuses from other people that I liked.  Short, sweet, to the point...  Enjoy!  *EDIT - After finishing this blog I realized this was not short in the slightest...  But each thought is pretty short.  Sorry.  :P

I'm cheering for the Packers!  Jordy Nelson (from K-State) is a receiver for the Packers.  Love to see K-State players succeeding later in life.  :)

Michael:  Jordy should salute the crowd next time he scores!  (He's talking about the controversial call at the end of the Pinstripe Bowl that K-State was in at the end of the last football season.  A player saluted the crowd and got an unsportsmanlike conduct penalty.  That pushed back the extra point 15 yards.  We failed to make the 2-point conversion to tie the game and send us into overtime.  What do you think of the call?  Check out the link.)

Halftime, Packers lead 21-10.  Now time for the Black Eyed Peas and Will.I.Am

Oh my gosh!!!  It's SLASH!!!  I love me some Guns and Roses!!!  I had no idea Slash was going to be a part of the halftime show!!  All I'd heard was Black Eyed Peas and Will.I.Am.  Freakin fantastic!  More excited about Slash than the headliners.  :P

Usher too?!?!?  WOW!!!  This halftime show is awesome!!!

Well that was a great show!  The robot-light-dancers were interesting but cool.  I know a lot of Black Eyed Peas songs, so I could sing along with the entire show.  :)  Very good halftime show!!

This is the most I've ever paid attention to any Super Bowl.  The game, the commercials, the halftime...  I'm actually enjoying this Super Bowl for more than the food!  (We only have leftovers.  :P  Maybe next year we'll have enough dough to have a nice little Super Bowl party.)  :)

New Glee after the Super Bowl...  I think I'll probably go to bed, work tomorrow.

Reminds me of the Chevy commercial a few years ago.  Although after watching the Chevy commercial again, they are not that similar...  But I still like them both!

Back to Work

Well, after 3 days off school, I'm back to work today and tomorrow, before another weekend.  :)  The 2 day week is pretty nice, but I think I got spoiled sleeping in the last few days.  It was REALLY difficult to get out of bed this morning.  I thought some of my kids might not come to school today since so much had been canceled this week, but I guess by today, their parents were ready to get rid of them and went ahead and sent them back to school.

While I, as well as kids, love snow days, the 3 days we had off this week put us about a week behind in our instruction.  That means we really have to cram to fit everything in in time for state tests.  I know that teachers shouldn't teach to the test, and I certainly don't do that.  But there is a lot of material in our curriculum that they need to know to be ready for the test, so we need to be sure to hit those items.  Other things that they need to learn that aren't on the test will still be taught, just after the testing window is closed.  It's stressful being a teacher!  I'm ready for summer!

Hope you all stayed warm and safe through the storm.  We're going to Topeka for the weekend, so hopefully the weather is nice.

Crazy, crazy snow storm!!!

Well, If you're anywhere in the midwest right now, you know the weather has been crazy around here.  Monday we had school canceled.  I was surprised, I thought we'd have to go to Monday, then be off on Tuesday and Wednesday.  We also had today off.  K-State was off both days too!!  So Michael and I had both days off together!  It was really nice!  Today we got a little stir-crazy in the apartment and went to lunch at Panera and then to Target to do a little browsing and shopping, anything to get out of the apartment for a while.  Now we're waiting to see if we have school tomorrow.  My school district hardly ever cancels, so to have 4 days off already is kind of crazy in itself.  I'm not counting on another day, but sort of wishing for one.  We'll see.  It's certainly nice to sleep in in the morning.  I'll keep you informed!!

My wonderful hubby went out and scraped my car and brushed off all the snow so we could go out to lunch.  He was a mess when he came in, but enjoyed the short photo shoot!  :)  What a cutie!

Week 4: Pastitsio

This week I only made one recipe, not because I don't enjoy cooking all the time, but because I'm making recipes designed for 4-6 people, and there are only 2 of us!  So I make plenty of food and we have lots of left-overs.  So this week, we needed to eat some of those left-overs.

Pastitsio
This is sort of like a fancy goulosh.  Elbow macaroni, ground beef, onion, and tomato sauce are the basics in this recipe.  I layered the noodles and beef mixture into a baking dish, then in a sauce pan mixed Parmesan cheese, butter, flour, milk, and egg.  Finally, I poured the milk/cheese mixture over the meat and noodles.  Lastly, I baked it all together.

Michael and I enjoyed this recipe, but there seemed to be something missing from it.  I thought all it needed was a little more salt, Michael added some more spaghetti sauce and cheddar and thought that helped.  For that reason this recipe earns 2.5 out of 4 stars (yup, switching to stars now...  Maybe next month I'll choose something different to measure by).  Michael gives it 1 star, I give it 1.5.
