Week 6: Mexican Soup, Chicken and Pasta, and Banana Chocolate Chip Cookies

Mexican Soup
I got a calendar in my mailbox at the beginning of the year that talks about healthy living.  It has recipes on it, as well as a way to track your workouts and weight (goals, successes, etc.)  This recipe was in that calendar as the January recipe.  This recipe has corn, beans, broth, tomatoes, and chicken (other stuff was in it, but this was the basics).  It turned out a little more like stew that soup (bigger chunks of veggies/chicken, less broth).  I enjoyed this recipe, but I like soup a little more.  The flavor, however, was really good.

We give this recipe 3.5 stars.  Like I said, I prefer soup to stew.  :) 

Chicken and Pasta
I don't have my cookbook next to me at the moment, so I don't remember the exact name of this recipe, but it was from my Comfort Food Diet cookbook, so this was a healthy recipe.  Sadly, it wasn't as good as I was hoping it would be.  I breaded chicken tenders and cooked them in a small amount of oil (sort of frying).  I also made a homemade tomato sauce (also a part of the recipe) to go with the chicken.  That was all that was included in the recipe, so I chose to pair this with some pasta, always a favorite of Michael and I.  The sauce turned out quite well and was really yummy with the pasta.  The chicken, however, had a funny taste (maybe it was something in the breading, or the fact that I didn't fry it in much oil).

Michael and I give this recipe 2 stars out of 4.  The sauces and pasta was good, but since the chicken was one of the main parts of the recipe and it didn't turn out too well, it left this recipe wanting something more.  Not my favorite, but I might make the sauce again sometime.  :)

Banana-Chocolate Chip Cookies
This was another recipe from my Comfort Food Diet cookbook.  I chose this recipe because it called for ripe bananas and a have a freezer full!  Michael and I like bananas, but there's usually one or two left in every bunch that ends up ripening too much before it gets eaten, so I freeze them.  This recipe made about 3 dozen cookies, each about 75 calories.  They are soooo yummy!!  I think the bananas kept them very moist.  They are spongy and scrumptious!  You can't help but eat several.  The banana flavor is subtle, but delicious!

Michael and I give this recipe 4 enthusiastic stars!!  Great recipe!  Ask for it!  You should try it!!
