That title has all the right words, huh?! I mean, how could you not make that kind of recipe?!? It sounds perfect! I let me tell you, these Skinny Double Chocolate Banana Muffins taste just as good as the name promises! I had a bunch of bananas in the freezer, thus the ice cream and these muffins. I'm proud to say that I used all of the bananas and my freezer is free of them! This recipe is great! The bananas make them super moist, the honey sweetens them without sugar, the Greek yogurt adds plenty of protein, and the whole wheat flour is great too! I only used 2/3 cup whole wheat flour and 1 cup all purpose flour, because when I use all whole wheat flour my muffins also end up super dense. When I do half and half whole wheat and all purpose flour I get much better results. However, feel free to use all whole wheat flour if that's what you and your family prefer. These are supposed to be for breakfast, but my family ate their dinners so well, they each got one for dessert! They are delicious! If you have any bananas left over after all those delicious ice cream recipes this morning, give these a try!
Also, the recipe said it made a dozen muffins, but I had to REALLY load the muffin cups full to use all the batter. Then, they kind of overflowed when I baked them. Perhaps my heart muffin cups are smaller than standard, who knows? If they do hold the same amount as a standard muffin tin, this recipe should make closer to 14-16 muffins.
