Hey Friends! Sorry it's been a while! I'm back now and I have a great new recipe to share with you! Hidden Veggie Sloppy Joes! Enjoy!
First, let me be honest with you, I was a little concerned about how this recipe would turn out. I've never purposefully hidden veggies in my food. Some recipes "call for" hidden veggies, like my Shephard's Pie, but on the whole, I just make whatever the recipe tells me and it either does or doesn't have veggies. So when I saw this recipe I worried about whether it would really "hide" the veggies, specifically the mushrooms. Now, don't get me wrong, I have used mushrooms effectively and had many recipes turn out great, but I have years of "I don't like mushrooms" mantras in my brain and sometimes it's hard to give a recipe a chance when I see them on the ingredients list. Nevertheless, I put them in and this recipe was great! I am so excited! It has probably been 11 years, Camp Good News, since I've had Sloppy Joes. I was under the impression they were just ok, not something I actually wanted to seek out. Well let me tell you friends, this is going into our regular line up, because, YUM! Here's how it all went down...

Now I've said before, we always make recipes the first time the way the recipe says, because you'll never know if you like a recipe if you change it before you start. However, I'm cheap, and when I have similar ingredients on hand I tend to reach for them first. Instead of 1.25 lbs ground beef, I used ground venison because I had it in the freezer (Thanks again, Sis and Adam!). Instead of 10 oz of mushrooms, I used 8 oz (because that's what size a package is). That's all the alterations I did! Pretty by-the-book!
Seriously, Guys, so good! Michael and I gave this recipe 4 thumbs up! We each ate 2 sandwiches also! Another great review is that my kids gladly ate their dinner with no complaining or arguing! Yes! Win! This recipe was a little sweet, although it only had 1.5 tbsp brown sugar. I thought it was great! I hope you try it and enjoy it as well!
