Sweet Potato, Turkey Bacon Egg Bake

Good morning, Friends!  I don't have a picture of this recipe because we've already eaten all of it.  But I figured since I was eating leftover Veggie Casserole for breakfast, I'd post the recipe for the other casserole we had last week, Sweet Potato, Turkey Bacon, Goat Cheese Egg Bake.  This was another great recipe, as it's already gone.  ;)  I didn't have goat cheese on hand, but I did have some Feta that needed used up, so I substituted it.  I actually love using turkey bacon instead of regular because it's not nearly as greasy, it's a lot healthier, and it's cheaper!  Yay!  Egg casseroles always tend to be pretty cheap.  Even at $2 per dozen, which I haven't paid in quite some time, eggs are an affordable ingredient.  (**Sidenote: Eggs are currently $1.09 at Aldi's.  I bought 2 dozen yesterday.)  ;)  Michael likes his bacon crunchy, so I needed to cook it longer than I did to make this an excellent recipe in his book, but I thought it was good.  It will be even better next time I try it and I use the actual goat cheese.  :)  Overall, it was a great recipe!  We finished it long before the veggie one.  :P  Sorry I don't have a picture, click the link and you can see pictures from the original post.  Enjoy!  Happy Tuesday!
