COVID-19 Quarantine Day 50 - Cloud Eggs

Ok, slight time out on the garden posts to talk about Michael's and my breakfast!  Cloud eggs!  They were pretty easy, super tasty, and they look awesome!  Plus, I used some of Connor's green onion from the garden!!

I tried to completely pull one of the onions out, but it was rooted good and didn't want to let go, so I just took the tops and hope they'll continue to produce all season!

The egg whites look all cloudy because I whipped them up really good!  Then I folded in the green onion and parmesan!  😋

Michael and I thought they were great and give this recipe 4 out of 4 stars!
