Day 1 - Breakfast - Pancakes!

As I mentioned in my previous post, I have a full week off to just spend with my babies!  Depending on how wall to wall our fun is this week, I may be posting a lot, or just a little because we're too busy.  For now I'm in a blogging mood, so I'm back again!

So far this morning I got to sleep in until 8, when my babies came into my room, crawled into bed with me, and wanted to snuggle.  :)  I have got to tell you, the King sized bed is perfect for fitting the whole family in for snuggles, tickle fights, and watching movies together.  Over the weekend we all watched Shrek the Fourth and the Charlie Brown Thanksgiving Special together in our room.  It was fun!  So the kids crawled in bed this morning and we all snuggled for a while, then Connor said, as he does every morning shortly after he gets up, that he's hungry and thirsty.  So I asked the kids if they wanted pancakes or eggs for breakfast.  Connor said pancakes and Avery said "peanut butter sandwich."  You'd think it was a food group the way these children eat it!  I told her she could pick eggs or pancakes, but offered to put peanut butter on her pancakes, which she accepted.  Connor chimed in that he, too, wanted peanut butter on his pancakes.  ;)

I have an awesome pancake recipe that I just love!  I tweak it every now and then and probably will a little more after today, but not much.  These are really good pancakes and I've been making them for years.  They also don't require bisquick, so I always have the ingredients on hand.  I'll post the recipe at the end of this post.

Today I learned a valuable lesson about my beloved pancakes: the temperature of the griddle matters.  I could not figure out why my pancakes were so flat!  They have baking powder and baking soda in them that always make them nice and fluffy, but today, not so much.  They also weren't browning.  They looked kind of like crepes.  Finally, after the first batch took a long time and didn't look quite right, I looked at the side of the griddle and found that at some point Connor had turned the heat WAAAAAY down.  I normally cook my pancakes at 350 and the griddle was set below 250!  They cooked MUCH better when I got the griddle up to temp.  :P  I never even bothered to check the temp because I never change it.  But Connor loves buttons, switches, and toggles and I'm 93% sure he's my culprit.  He also loves turning the dial on the toaster so my toast ends up as hot bread or a lump of coal.  :P  Kid needs to be a pilot so he can play with switches and dials all day long.  ;)

The next batch of pancakes cooked better, but we're still just a tad flat (compared to where they usually are).  I'm going to adjust the recipe just a tad more.  ;)  The kids loved the pancakes and we had pantry of leftovers for snacks or breakfast another day this week.  The dishwasher was almost full, so I added the few pancake dishes and ran it, so now my dishes are all done too!  Woot!  Great way to start my week.  Connor wants to do everything today, go everywhere.  ;)  Every once in a while my little introvert needs to get out too.  :P  Happy Monday, Friends!  Have a great one!

Perfect Homemade Pancakes

Put
     -2 tbsp vinegar
     -1 cup milk
Into a small bowl, stir gently, set aside to "sour".  (You can substitute 1 cup buttermilk if you have it on hand.)
Put
     -1 1/4 cup flour
     -2 tbsp sugar
     -1 1/4 tsp baking powder
     -1/2 tsp baking soda
     -1/2 tsp salt
Into batter bowl.  Stir ingredients together until well incorporated.
Add
     -1 egg
     -1 tbsp vanilla
To milk mixture.  Wisk to combine.  Pour milk mixture into flour mixture.
Melt
     -2 tbsp butter
And add to batter.  Stir just until combined.  Do not overmix.  Cook on hot griddle, approximately 350 degrees.  I prefer silver dollar pancakes because you can just grab them and much, no butter or syrup necessary!  Makes about 18 - 3 inch pancakes.  Enjoy!
